Slow Cooker Teriyaki Chicken, Pineapple & Veggie Rice Bowl Recipe

Prep Time: 15 Minutes – Cook time: 3 hours – Yields: 6

Ingredients: 1 green pepper, cut into bite-sized chunks 1 red pepper, cut into bite-sized chunks 1 red onion, cut into bite-sized chunks 1 large carrot, cut into 1/4 inch chunks 1 cup fresh pineapple chunks 1.875 lbs pounds boneless, skinless chicken breast, fresh or thawed (about 3 medium to large breasts) 1/2 cup soy sauce 1/4 cup pineapple juice 1 tablespoons toasted sesame oil 1/2 teaspoons ground ginger 1 teaspoon red pepper flakes 1 tablespoons honey sriracha, if desired 270g (approximately 1 1/2 cup) White rice

Instructions: 1 .Add all ingredients to crock pot, mix, cover, and cook on low for 3-4 hours. 2. At the 3 hour mark cook 1 Cup of white rice 3. Cut and red the chicken into bite size pieces. 4. Portion rice and chicken into 4 containers. 5. Have a happy, healthy week
